Amazingly, all Nubocha products have Low Net Carbs. How?
We calculate our Net Carbs by subtracting the allulose and fiber from the total carbs. Since allulose is not an added sugar, it does not appear on the nutritional label.

Some commonly asked questions...
1. How are Nubocha's Net Carbs calculated?
To calculate Nubocha's Net Carbs, subtract Fiber and allulose from the Total Carbs. For example, our Chocolate Arriba flavor has 0.4g of net carbs per serving. How? 31g of Total Carbs – 30g allulose – 0.6g Fiber = 0.4g of net carbs. Allulose, Nubocha's only sweetener, is not metabolized by the body and therefore does not count as a carbohydrate.
2. Why does each flavor feature different nutritional facts even though they have basically the same ingredients?
Each of our flavors features its own specially-designed recipe to enhance its flavor, texture and nutrition. Those recipes draw on different formulas of our core ingredients to emphasize their special “talents” or specific purposes.
3. What is allulose? Where does it come from?
Allulose is a rare sugar with nearly zero calories that's found naturally in foods like raisins, figs and maple syrup. We chose allulose as our sweetener because it offers the taste and texture of sugar without the calories. Additional healthy benefits: It’s not an "added sugar" because it registers so low on the glycemic index. It's not metabolized by the body into blood glucose. And it won’t spike insulin.
4. I love Nubocha! When will it be sold near me?
To shop for our delicious gelato in person, we are currently sold in the Greater Los Angeles and San Francisco areas (View Locations), and we are expanding to new retail outlets rapidly!
5. I’m allergic to nuts. Can I eat Nubocha?
Happily, our Chocolate Arriba flavor is totally nut-free, since it is produced using only 100% real cacao. It's important to note that our other products are nut-based, and that we pack and produce our products in a facility that handles nuts and strictly adheres to allergen-free protocols.
6. Is Nubocha Kosher?
Yes, Nubocha is certified Kosher by the Orthodox Union Kosher Certification Agency.
7. Is Nubocha non-GMO?
Yes, Nubocha is non GMO Project Verified. Our products will never diminish the natural beauty of the world we live in! We believe that promoting bio-diversity and small, independent farmers is vital, not just for the sake of our gelato or the farmers, but for our planet.
8. Is Nubocha gluten free? What does that mean?
Yes! Nubocha is proud to be certified gluten free by the Gluten-Free Certification Organization (https://gfco.org/). To be gluten free means that from the ingredients, to the manufacturing process and the packaging we use, we do not use or come into contact with any gluten – Nubocha can be enjoyed by those with celiac or gluten intolerance as a result!
